Ingredients
1/2 c. white sugar
2 tbsp. cornstarch
1/4 c. cold water
1/4 c. orange juice
1 lb. dark, sweet cherries, rinsed and pitted
1/2 tsp. orange zest, finely grated
3 c. vanilla bean ice cream
1/4 tsp. cherry extract
1/4 c. brandy
Directions
In a wide saucepan, whisk the sugar and cornstarch together.
Stir in water and orange juice and bring to a boil over medium-high heat. Continue to whisk until thickened.
Stir in cherries and orange zest then return to a boil.
Once boiling, reduce heat and simmer for 10 minutes.
Spoon ice cream into bowls as cherries cook.
Remove cherries from heat and stir in extract.
Pour in brandy and ignite with a long lighter. Shake the pan gently until the flame extinguishes.
Spoon the cherries over the ice cream and serve.
