Denver Omelet

Equipment:

  • knife

  • cutting board

  • whisk/fork

  • small bowl

  • skillet

  • spatula

Ingredients

  • 3 large eggs

  • 1 tbsp. butter

  • 1/4 c. ham, diced

  • 2 tbsp. onion, diced

  • 2 tbsp. green bell pepper, diced

  • Salt & pepper

  • 1/3 c. Cheddar cheese, shredded

  • 1 pinch cayenne pepper

Directions

  1. In a small bowl, beat the eggs just until combined. Do not overbeat. 

  2. Melt the butter in a skillet over medium-high heat. 

  3. Add the ham, onion, and bell pepper to the skillet and season with salt and pepper. Cook for about 5 minutes, until the onions soften and the ham begins to caramelize. 

  4. Reduce the heat to medium-low and pour the eggs into the skillet. Mix briefly with a spatula while shaking the pan to ensure the ingredients are evenly distributed. 

  5. Run the spatula around the edge of the omelet.

  6. Sprinkle cheddar cheese and cayenne pepper over the top of the omelet. 

  7. Cook while shaking the pan occasionally until the top of the omelet is wet but not runny - about 5 minutes. 

  8. Use a spatula to fold omelet in half and transfer to a plate.
