Giant Carob Cookies

Equipment:

  • measuring cup

  • measuring spoon

  • baking sheet

  • parchment paper

  • medium bowl

  • large bowl

  • spoon/spatula

  • hand or standing mixer, if you have one

Ingredients

  • 2-1/4 c. all-purpose flour

  • 1 tsp. baking powder

  • 1/4 tsp. kosher salt

  • 2 sticks unsalted butter, room temperature

  • 1-1/4 c. granulated sugar

  • 2 large eggs

  • 1/2 c. carob powder

  • 1 tsp. vanilla extract

  • 1 c. carob chips

  • 1-1/2 c. white chocolate chips

Directions

  1. Preheat oven 350°F. 

  2. Line baking sheet with parchment paper.

  3. In a medium bowl, stir together the flour, baking powder, and salt. 

  4. In a large bowl, cream butter and sugar until light and fluffy using a hand mixer or stand mixer if you have it.

  5. Beat the eggs into the mixture until well combined, then mix the vanilla in as well. 

  6. Stir in the flour until combined, do not over mix. Mix in the carob and white chocolate chips and stir until the chips are throughout the dough.

  7. Distribute the dough evenly into 12 cookies and place on the baking sheet. 

  8. Bake for 16-20 minutes or until the tops of the cookies are starting to set. 

  9. Eat warm or allow to cool completely on the tray.
