Honey Glazed Carrots

Ingredients
2 lbs carrots, peeled
1/4 c. honey
3 garlic cloves, minced
2 tbsp. butter or ghee, melted
1 tbsp. olive oil
1 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tsp. salt
1/4 tsp. pepper
Parsley, thyme, or herbs for garnish, optional
Directions
Preheat oven to 425°F.
Cut carrots on a diagonal, about 1" long. If the carrots are thick, you can also slice them in half to make them narrower.
In medium bowl, toss carrots with honey, garlic, butter, oil, and spices.
Pout the carrots onto a sheet pan and spread out.
Roast for 20-25 minutes, tossing halfway through.
Transfer to a serving dish and garner with herbs, if desired.
