Lavender Shortbread Cookies

Equipment:

  • mortar and pestle

  • standing mixer with paddle attachment

  • rolling pin

  • baking sheet

Ingredients

  • 2 tsp. dried lavender

  • 3/4 lb. salted butter, room temperature

  • 1 c. sugar

  • 1 tsp. vanilla extract

  • 3-1/2 c. all-purpose flour

Directions

  1. Using a mortar and pestle, grind up the lavender until it is very fine, nearly a powder.

  2. Using a stand mixer with a paddle attachment, mix the butter, sugar, and lavender until combined.

  3. Add vanilla and mix just enough so the vanilla disappears. 

  4. Add flour to the bowl and mix until it forms a dough ball.

  5. Roll the dough until about 1/2" thick, then cut into desired shape. 

  6. Place cookies onto a sheet tray and refrigerate until cold and firm to the touch, about 1 hour.

  7. Preheat oven to 350°F. 

  8. Bake cookies for 20-25 minutes until cookies are lightly golden on the edges. 

  9. Allow to cool before serving.
