Ingredients
Bread
2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 c. granulated sugar
2 tbsp. lemon zest
3 large eggs, room temperature
1 c. whole milk Greek yogurt, room temperature
1/2 c. olive oil
1/4 c. lemon juice
Glaze
1-1/4 c. powdered sugar
2 tbsp. lemon juice
Directions
Preheat oven to 350°F.
Line an 8" x 4" loaf pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, use your fingers to rub the lemon zest and sugar together until well blended. Then add the eggs, yogurt, olive oil, and lemon juice. Whisk to combine.
Pour the batter into your prepared pan and bake for 55-60 minutes or until a toothpick inserted into the center of the loaf comes out clean. If you need to prevent too much browning while in the oven, tent the pan with aluminum foil after about 45 minutes.
Remove pan from the oven and allow to cool completely while in the pan before slicing.
To make the glaze, whisk all the ingredients in a small bowl until smooth.
Drizzle glaze over the cooled bread and serve immediately.
