Molasses Tea Cake

Ingredients

  • 2-1/4 c. all-purpose flour

  • 1/3 c. sugar

  • 1/4 c. packed brown sugar

  • 1/4 tsp. cinnamon

  • 1/8 tsp. salt

  • 1/2 c. butter, softened

  • 1 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1/3 c. milk

  • 3 tbsp. molasses

  • Powdered sugar

Directions

  1. Heat oven to 350°F. 

  2. Combine flour, sugar, brown sugar, cinnamon, and salt in a bowl.

  3. Add the butter and beat on low speed until it resembles coarse crumbs. Reserve 1/3 c. for topping and set aside.

  4. Stir baking soda and baking powder into the bowl with the remaining mixture and beat on low speed until mixed well. 

  5. Add milk and molasses to bowl and beat just until moist. 

  6. Divide dough into 16 pieces.

  7. Shape into moons, stars, or whatever shape you would like, keeping them 3/4" thick. 

  8. Place cakes 2" apart on an ungreased cookie sheet and sprinkle the reserved crumb mix on top.

  9. Bake for 11-14 minutes or until you insert a toothpick in the center of a cake and it coes out clean.

  10. Sprinkle with powdered sugar before serving.
