Peas with Lemon and Tarragon

Equipment:

  • measuring spoon

  • grater

  • saucepan

  • strainer

  • wooden spoon

  • knife

  • cutting board

Ingredients

  • 16 oz. frozen baby peas

  • 1 tsp. sugar

  • 1/2 tsp. salt

  • 2 tbsp. butter

  • 1 tsp. chopped fresh tarragon (or 1/2 tsp. dried)

  • 1/2 tsp. lemon peel, grated

  • 1 tsp. lemon juice

  • Salt & pepper

Directions

  1. Add peas, sugar, and salt to a medium saucepan. Add enough water to just cover the peas. 

  2. Bring pan to a boil, then reduce heat and simmer for 6 minutes. 

  3. Drain the peas and return to the pan. 

  4. Add all the remaining ingredients to the saucepan and toss well to coat.
