Ingredients
1 medium head of red or green cabbage, finely sliced or shredded.
1 medium carrot, grated
2 garlic cloves, minced or shredded
2 c. water
1-1/2 c. vinegar
2 tsp. granulated sugar
1 tsp. salt
Directions
In a large jar like a quart mason jar, place the shredded cabbage, carrot, and garlic. Pack it down with a spoon or your hands and set aside.
Over high head, add the water, vinegar, sugar, and salt to a saucepan and bring to a boil.
Turn the heat off and pour the liquid into the jar until the vegetables are completely covered, but make sure to leave 1" of space at the top.
Allow the jar to reach room temperature, then place the lid on top and store in the fridge.
