Pumpkin Fritters

Ingredients

  • 2 c. grated pumpkin

  • 1/3 c. parmesan cheese, shredded

  • 1/2 tsp. garlic powder

  • 1 egg

  • 1-1/2 tsp. baking powder

  • 1 tbsp. rosemary, finely chopped

  • 4 tbsp. flour

  • 1/2 tsp. salt & pepper

  • Oil for frying

Directions

  1. In a large bowl, combine the pumpkin, parmesan, garlic powder, egg, and rosemary. Stir to combine.

  2. Add the flour, salt, pepper, and baking powder to the bowl and mix. 

  3. In a medium-large skillet, heat a thin layer of oil until hot. 

  4. Take about 1/8 c. of batter for each fritter and put it into the hot oil, flattening slightly. 

  5. Cook each fritter about 3-4 minutes or until it is brown, then flip and repeat on the other side.
