Pumpkin Fritters

Ingredients
2 c. grated pumpkin
1/3 c. parmesan cheese, shredded
1/2 tsp. garlic powder
1 egg
1-1/2 tsp. baking powder
1 tbsp. rosemary, finely chopped
4 tbsp. flour
1/2 tsp. salt & pepper
Oil for frying
Directions
In a large bowl, combine the pumpkin, parmesan, garlic powder, egg, and rosemary. Stir to combine.
Add the flour, salt, pepper, and baking powder to the bowl and mix.
In a medium-large skillet, heat a thin layer of oil until hot.
Take about 1/8 c. of batter for each fritter and put it into the hot oil, flattening slightly.
Cook each fritter about 3-4 minutes or until it is brown, then flip and repeat on the other side.
