Roasted Carrots

Ingredients
2 lb. carrots, washed, peeled, and cut
2 tbsp. olive oil
1 tsp. kosher salt
1/4 tsp. black pepper
Fresh parsley
Directions
Preheat oven to 425°F.
Line a baking sheet with parchment paper.
In a large bowl, toss carrots with oil and seasoning.
Pour carrots onto baking sheet and arrange in a single layer.
Bake for 18-20 minutes if you used baby carrots, 25-30 minutes if you used large carrots. Carrots should be tender when pierced with a fork.
Serve warm.
