Roasted Carrots

  • baking sheet

  • parchment paper

  • bowl

  • spatula

  • measuring spoon

  • fork

Ingredients

  • 2 lb. carrots, washed, peeled, and cut

  • 2 tbsp. olive oil

  • 1 tsp. kosher salt

  • 1/4 tsp. black pepper

  • Fresh parsley

Directions

  1. Preheat oven to 425°F.

  2. Line a baking sheet with parchment paper.

  3. In a large bowl, toss carrots with oil and seasoning. 

  4. Pour carrots onto baking sheet and arrange in a single layer.

  5. Bake for 18-20 minutes if you used baby carrots, 25-30 minutes if you used large carrots. Carrots should be tender when pierced with a fork.

  6. Serve warm.
