Shrimp Puffs

Ingredients

  • Cooking spray

  • 7-1/2 oz. can of refrigerated biscuits

  • 1 c. monterey jack cheese, shredded

  • 1 scallion, chopped

  • 1/2 c. mayonnaise

  • 1/2 lb. baby shrimp, cooked and peeled

  • 1/2 tsp. fresh dill, chopped

Directions

  1. Preheat the oven to 350°F. Coat a mini muffin tray with cooking spray. 

  2. Split each biscuit in half like a hamburger bun and press each half into the bottom of a muffin cup. Press the biscuit into the bottom and up the sides of the cup. 

  3. In a medium bowl, mix the cheese, scallion, mayonnaise, shrimp, and dill together. 

  4. Place 1 tablespoon of the mixture onto each biscuit. 

  5. Place in the oven and bake for 20 minutes or until puffs are bubbling and golden.
