Sweet Potato Pie

Ingredients
3 medium sweet potatoes
1/2 c. butter
1 c. granulated sugar
2 tsp. vanilla extract
2 large eggs
1/2 c. whole milk
1 9" unbaked pie crust
Whipped cream or marshmallow fluff, optional
Directions
Preheat the oven to 400°F.
Scrub the sweet potatoes to clean them and prick them with a fork 4-5 times. Place whole onto a baking sheet and bake for 45-50 minutes until the flesh is tender when pricked with a toothpick.
Remove from the oven and cool until you're able to handle them. Peel the skin from the sweet potatoes and place them into a large mixing bowl.
Reduce the oven to 350°F.
Add butter to the bowl with the sweet potatoes and mash until smooth. Add sugars and mix until combined well. Pour mixture into the unbaked pie crust.
Bake until the center of the pie is set, approximately 1 hour. Remove pie from the oven and allow to cool.
Top with whipped cream or marshmallow fluff in desired.
