Equipment:

  • measuring cup

  • measuring spoon

  • spatula

  • standing or hand mixer

  • medium bowl

  • 8 x 8 pan

  • shallow bowl

  • fine mesh strainer

Ingredients

  • 1-1/2 c. heavy whipping cream

  • 8 oz. mascarpone cream, room temperature

  • 1/3 c. granulated sugar

  • 1 tsp. vanilla extract

  • 1-1/2 c. cold espresso, prepared

  • 3 tbsp. coffee flavored liqueur, optional

  • 1 pkg. ladyfingers cookies

  • Cocoa powder for dusting

Directions

  1. In a mixing bowl, beat the whipping cream on medium speed. Slowly add the sugar and vanilla, beating until the cream forms stiff peaks. 

  2. Fold in the mascarpone cream until combined. Set aside. 

  3. In a different, shallow bowl, add the coffee and liqueur. Dip the lady fingers into the coffee - but just dip them, do not soak them. Lay the cookies on a single layer of an 8 x 8 pan. 

  4. Smooth about half the mascarpone mixture over the top of the cookies. Add another layer of dipped lady fingers, then smooth the remaining mascarpone on top. 

  5. Using a fine mesh strainer, dust cocoa powder over the top. 

  6. Refrigerate for 3-4 hours minimum before serving.
