Equipment:

  • measuring cup

  • measuring spoon

  • mixing bowl

  • wooden spoon

  • non stick pan

  • spatula

  • plate

Ingredients

  • 3 c. masa harina, a kind of flour

  • 2 tsp. salt

  • 2-3/4 c. warm water

  • 1 c. mozzarella cheese, shredded

  • 1/2 c. refried beans

  • 2 tbsp. oil

Directions

  1. In a mixing bowl, combine the masa harina and salt. 

  2. Add the water and mix with a spoon until the mixture thickens. 

  3. Knead the dough with your hands until it becomes smooth, then let it rest for 5 minutes. 

  4. Divide the dough in 14 balls. 

  5. With your hands, make a pocket in the middle of each ball. Place 1 tsp. of refried beans and 1 tbsp. of shredded sheese into the pocket and cover with the edges of the dough. Reform the ball and flatten into a thick disk shape. 

  6. Place oil in a non-stick pan and heat over medium-heat. 

  7. Once hot, add a pupusa to the pan and cook for 3 minutes on each side, or until sides begin to brown. 

  8. Remove from pan and place on plate.
